Chef Alyssa Gagarin loves how popular cauliflower rice has become. You can whip up your own in seconds by using a food processor, but you can also find them in grocery stores!
Some stores sell it in the fresh produce section like at Trader Joe's, or browse the freezer section at Whole Foods. That makes whipping up this recipe a total breeze!

1 head of cauliflower
2 cloves garlic
1 tsp cumin
½ tsp salt & pepper
Preheat oven to 450 degrees.
Remove leaves and cut cauliflower into florets.
Pulse cauliflower & garlic in the food processor until they resemble a rice consistency.
Mix in a drizzle of olive oil, cumin, 1/2 teaspoon of salt, and freshly ground pepper.
Spread mixture out on a sheet pan lined with foil. Do not overcrowd the pan!
Roast in oven for approximately 10 minutes.
Pour mixture into a bowl. Add desired amount of cilantro (or parsley), lime juice, & mix! Taste for seasonings!
