One week of Healthy Apple Recipes from some of Ketanga's favorite coaches: Day 4
For a quick and easy seasonal dinner, Brooke Taylor of Taylored Fitness has a delicious solution: the Apple Veggie Chicken Bowl.
The dish is good all year long, but the apples and sweet potatoes give it a sweet autumn flare.

1 package of organic chicken tenders
1 sweet potato
1 package of brussels sprouts
1 tbsp of olive oil
1 tbsp Durkee steak seasoning
2 gala apples
1 cup of low sodium chicken broth
3 cloves of fresh garlic
1/4 of a onion
Instructions: Part 1 - Chicken:
Heat a skillet on medium heat.
Wash and pat dry the chicken.
Place the olive oil, chicken strips in the skillet and add the Durkee seasoning.
Cook each side about 5-6 minutes until it is cooked through thoroughly.
Take the chicken out of the pan and place to the side.
Part 2 - Veggies:
Chop up the brussels sprouts, onion, sweet potato and garlic and place in the pan with a dash of olive oil.
Cook through frequently stirring.
Part 3 - Apples:
Dice up the apples and set aside.
Once the vegetables are cooked through add the apples and 1 cup of chicken broth.
Let it simmer until the broth is evaporated.
Then add the chicken for a minute or two to reheat. Dinner is served!!!
