One recipe, two ways!

We love the versatility of this dish that fitpro Taylor Walker (of Taylor Walker Fitness) sent over! Whether enjoyed as a main dish, or served on top of whole grain pasta or zoodles (zucchini noodles!), this recipe will be sure to satisfy.

Plus, use your freshly picked (or picked up from the farmer's market) apples as both an ingredient and a garnish for optimal flavor and seasonal charm.

Ingredients:

Meatloaf / meatballs:​
  • 1.5 Lbs Ground Turkey
  • 1 Tbs Ghee or Grass fed Butter
  • 1 Large Onion
  • 3 Garlic Cloves
  • 1 Apple (I used Fiji)
  • 1 Carrot
  • 2 Celery Stalks
  • 2 Eggs
  • 1/2 C Cooked Quinoa
  • 1/4 C Parmesan Cheese
  • 2 Tbs Honey Mustard
  • 1 tsp Dry Mustard
  • 1 tsp Celery Seed
  • 1/2 tsp Sage
  • 1/2 tsp garlic salt

Glaze:
  • 1/2 Cup Apple Sauce
  • 1/8 Cup Honey
  • 1 Tbs Dijon Mustard (optional)

Directions:
  1. Preheat oven to 400 degrees.
  2. In a pan melt butter and add chopped onions until they begin to soften, then add garlic. Cook until both are soft and onion is translucent (This is optional as they do cook down in the meatloaf if they are put in raw).
  3. In a bowl combine turkey, cooked onion, chopped apple and carrot, celery, eggs, mustard and spices.
  4. In a separate bowl combine apple sauce, honey, mustard and set aside (the glaze).

Meatloaf:
  1. Place mixture into a greased loaf pan.
  2. Pour HALF of the glaze of the top and sides of loaf or dip meatballs in mixture.
  3. Cover and bake for meatloaf 30 minutes.
  4. Uncover, add the remaining glaze, reduce heat to 375 degrees and bake another 30 minutes or until the internal temperature reaches 180.
  5. Let sit 5 minutes and serve. 

Meatballs:
  1. Make meatballs and dip in glaze. 
  2. Cover and bake at 400 degrees for 15 minutes.
  3. Uncover and coat with remaining glaze.
  4. Bake another five minutes. 

Taylor likes to serve hers with sauerkraut and sweet potatoes. Enjoy!
