Whether fueling for a workout or recovering after one, these no-bake energy bites are a great substitution for energy bars. These bites are a great blend of fiber & protein to keep you energized. Made with clean, healthy, and efficient ingredients, these bites are easily prepared without any cooking or baking, and they (really) taste delicious! The recipe comes from RDN Jenna Werner, who stopped by Ketanga's recent Pilates, Barre, & SUP fitness retreat in Montauk, NY to give a nutrition session and some snacks after a tough workout. Ingredients:
1 cup rolled oats 2/3 cup unsweetened coconut flakes 1/2 cup organic peanut butter {almond butter may be a substitute} 1/3 cup honey 1/2 cup pumpkin seeds [suggestion: SuperSeedz – Cinnamon & Sugar flavor] 1/2 cup flax/chia mix {or one or the other} 1/2 cup dark chocolate chips [in recipe today: EnjoyLife dairy free, nut free chips used] This recipe should make 25-30 balls, a serving suggestion is 1-2 balls for a snack – ranging in calories from 200-250 per serving. Instructions: Mix ingredients all together (start with dry ingredients and mix in "wet" - peanut butter/honey at the end). Roll into at least 25-30 balls and stick into the fridge!
